Sweet Potatoes Are A Nutritious Choice For Food Stockpiles

By Jennifer Danvers

It's hard for anyone to not like sweet potatoes if you give them a chance. Most people like white or red potatoes and they have nothing near the tasty flavor that sweet potatoes and yams have. Sweet potatoes and yams can both be boiled or baked and dressed up just like a regular potato. You can add butter, a little salt, and some bacon bits too if you like to bring out the delicious flavor they offer. If you prefer your sweet potatoes sweet, then you can still add butter, but also use a dab of white or brown sugar instead of salt to make a delicious side dish. Of course, millions of people move sweet potato pies or candied yams. They are always a holiday desert favorite.

What most people don't realize about the sweet potato is how very nutritious they are for you. They are packed with nutrients like vitamins A and C. They have protein and fiber. They have no trans fat or saturated fat unless you add things like butter or sugars. This doesn't necessarily mean that sweet potatoes are better over all than white potatoes, but they are a terrific change of pace and should be eaten much more often than people do. A lot of people might think that sweet potatoes only go well with turkey or ham, but actually they are very complimentary to a beef or pork roast instead of carrots. They will also go well with chicken and various species of fish.

You won't find another vegetable that is any better for long term storage than the sweet potato either. You can keep them in the refrigerator and they will stay good for a very long time. If you don't have room for long term storage in your refrigerator, then you can use a cool dark pantry, cellar or basement as long it is dry as well as cool. At sixty degrees or cooler your sweet potatoes can stay firm and nutritional for up to a year. Adding sweet potatoes to your fresh food storage is an excellent choice because they will stay good for such a long time if you protect them form bruising and cuts.

Having a food stockpile is something many families have decided to do these days because of the uncertain economic times. Most of the time they will focus their attention on storing up canned goods because they can be kept and eaten for so long, but you should not underestimate the staying power of some fresh vegetables like sweet potatoes, white potatoes, turnips and carrots. The great thing about having fresh root vegetables like these in storage is that they require no jars or other special preparations ahead of time. They are simply cooked and eaten just like they came fresh from the garden or grocery store.

There is no good reason at all to not keep sweet potatoes in the house all of the time. You can grow them yourself if you love to garden and if not, get them at the grocery store or by the bushel at a local farmer's market. They are a great change of pace for weekday meal side dishes and they are so good for you too. Over all, they are a perfect vegetable to keep around.
